This Is my tomato lentil stew with crispy potatoes. So this one-pot stew is perfect for weeknight cooking. It starts off with a classic aromatic base of onions, celery and carrots. The base is cooked down with tomatoes and then you add some lentils. Once the lentils have softened a little bit, we add some kale and dill. Then we top it with sliced potatoes, cause it actually protects the lentils a little bit and helps them cook and become really tender. It also gives you a crispy topping, which gives you a lovely textural contrast when you bite into it.
