This silken tofu-miso dressing from RVR restaurant in Venice, Calif. It’s incredibly creamy, but also really light from the tofu, which gives it a subtle sweetness. There’s nuttiness from sesame and a really rich umami from miso. It’s really wonderful as a dip that you can scoop up big amounts of it in endive leaves. You can even toss it with udon or other noodles or spread it on toast. It’s so delicious.
