Guava and Cream Cheese Danish Cookie

If you love Cuban pastelitos, you’re going to love this giant cookie. I call it a cookie, but the texture leans slightly cakey. Flavor-wise, it’s creamy and tangy and buttery. And the edges get crunchy and almost caramelized, like the outside of the perfect cookie. The center stays cheesecake-like, with bits of that floral and fruity guava swirled through.
