This quick skillet dinner of spiced, seared ground beef over cooling yogurt combines elements of two Persian classics: kebab koobideh (grilled kebabs) and mast-o-khiar (cucumber yogurt).

This recipe for smashed beef kebabs with cucumber yogurt is a great option when you want to get dinner on the table fast. The kebabs come together really quickly, so you want to start with the cucumber yogurt. That’s just Greek yogurt, some grated cucumbers, chopped mint and garlic that chills in the fridge while you make the kebab mixture. This one is inspired by Persian koobideh kebab. Then this gets cooked in irregular pieces, really hot and fast. Kind of like you would a scallop to get a nice crusty char on one side. Add dried cherries and walnuts to toast in the fat. Season the yogurt with salt just before you serve it. Get the beef on top and finish with some pomegranate molasses and mint leaves.
