Mushroom Wafu Pasta
Wafu directly translates to “Japanese style.” Kinoko, or mushroom, wafu pasta is a spaghetti dish made with a variety of Japanese mushrooms (and occasionally bacon) in an umami-rich soy-butter sauce emulsified with pasta water.

Today, I’d love to show you how to make my mushroom wafu pasta. Wafu just refers to anything done in the Japanese style. We have a pot of water going right now. So let’s get started. Don’t forget to take out a bit of pasta cooking water. This will help us with our sauce. We’re going to saute up a trio of mushrooms. Once you get a little bit of brown on the edges, you can season with salt and pepper. Push them to the side. Combine it with some soy sauce and butter to create a really easy, pantry-friendly pasta sauce. As soon as it’s done, just plate it up, some sliced scallions for freshness, and some shredded nori. Look at that. Ready to eat. Going to give this a taste test.
