This is my version of the iconic potato chop. You can trace the roots of this dish to Christian communities across India, Pakistan and Iraq. The building blocks are spiced minced meat, a dough made of mashed potatoes and then the patties are shaped. The beef on the inside, the potato on the outside, and you dip each one in egg wash and breadcrumb and then shallow fry it. The confetti of flavors and textures in one bite alone is worth all the effort.
