This Is my pork laab a.k.a. laab moo. As a Thai American, it’s hard to choose my favorite Thai dish, but Thai meat salads like this laab are definitely in the top three and taste like the pure embodiment of the best of Thai food — spicy, tart, savory, and bright with herbs, this dish is always so satisfying, plus easy-to-find ingredients and taking less than 30 minutes, make it a regular in my dinner rotation.
