Crackly fried Chinese scallion pancakes take the form of baked buns here, crisp on the sesame-speckled outside and tender within.

These are sesame scallion buns inspired by Chinese scallion pancakes. Dousing the scallions in hot oil really brings out their savory, aromatic flavor. Spread that in this enriched bread dough. Once you cut these into spirals, sprinkle the tops with sesame seeds so they come out nice and crackly. And as soon as they come out of the oven, you brush them with a little more of that scallion oil to give it a really delicious scent and such a good flavor. And if you want, you can swipe them through with some chili oil.
